Crunchy Beet, Bean, and Apple Salad

Boil the beets, peel them, and cut them into cubes. Mix the cubes with cooked beans, peeled and diced apples, oil, vinegar, salt, and pepper. Pile the mixture onto a plate and garnish with thin beet slices.

Per beet: 1 cup cooked beans, 2 apples, 3 tablespoons oil, 1/2 tablespoon 9% vinegar, salt, and pepper to taste.
