Duo of Flavors: Recipe for Chicken Rolls with Sweet Peppers

While duck pairs well with tart fruit or berry sauces—especially those made from green apples and cranberries—professional chefs recommend serving roasted or fried chicken and turkey with sautéed onions and roasted bell peppers. In this recipe, sweet peppers are added to the meat during the cooking process. The dish will look more festive if you use peppers of various colors.

Ingredients (for 4 servings): 3 chicken fillets; 2 sweet peppers; 2 tablespoons vegetable oil + for greasing; ½ tablespoon ground hot pepper; ½ tablespoon paprika; ½ tablespoon ground black pepper; ½ tablespoon ground cumin; ½ tablespoon garlic powder; ½ tablespoon salt.

Cut each fillet into pieces and lightly pound them. Slice the peppers into strips. Mix the salt with garlic, cumin, hot pepper, paprika, and chili, then sprinkle this spice mixture over the fillet pieces.

Place the peppers on the meat and roll them up. Secure the ends with toothpicks.

Heat oil in a skillet and add the rolls. Brown them on all sides. After 5 minutes, turn off the heat.

Transfer the browned rolls to a greased baking dish and bake in the oven for 20 minutes at 180 °C (350 °F).

In addition to peppers, a harmonious complement to roasted chicken is boiled rice with corn and green peas. A creamy mushroom sauce pairs well with roasted chicken. Mashed pumpkin and cauliflower can serve as a side dish. However, it’s best to avoid pairing chicken with white cabbage.

Life Hack

Before serving, be sure to remove the toothpicks from the meat. If you replace the toothpicks with skewers when serving, the dish can be presented as a buffet appetizer.
