Chicken Roll-Ups

  • 1 chicken breast
  • 3 eggs
  • Fresh herbs, salt, pepper, and oil to taste
  • Bread crumbs
  1. Boil two eggs. Cut the chicken breast into two pieces. Make a lengthwise cut in each piece to open it like a book. Cover each piece with plastic wrap and gently pound it. Season each pounded piece with salt, pepper, and chopped herbs. Place one boiled egg in the center of each piece.
  2. Roll each slice into a tight roll to form two cutlets. Dip each roll in beaten egg, then coat it in bread crumbs.
  3. Fry the cutlets in a skillet until golden brown on all sides, then transfer them to the oven for 30 minutes. Once cooked, slice the cutlets into pieces.
