Chicken Roll-Ups
- 1 chicken breast
- 3 eggs
- Fresh herbs, salt, pepper, and oil to taste
- Bread crumbs
- Boil two eggs. Cut the chicken breast into two pieces. Make a lengthwise cut in each piece to open it like a book. Cover each piece with plastic wrap and gently pound it. Season each pounded piece with salt, pepper, and chopped herbs. Place one boiled egg in the center of each piece.
- Roll each slice into a tight roll to form two cutlets. Dip each roll in beaten egg, then coat it in bread crumbs.
- Fry the cutlets in a skillet until golden brown on all sides, then transfer them to the oven for 30 minutes. Once cooked, slice the cutlets into pieces.
