Signature Eggplants

Start with small eggplants, estimating about one per person. Wash them and slice them **lengthwise into a fan shape**, leaving the stem intact. Generously sprinkle salt all over and let them sit for about ten minutes. Between each “petal” of the fan, layer whatever your imagination and pantry can provide. For example:

1. First layer – thinly sliced mushrooms and bell peppers;
2. Second layer – sliced cured meat or sausage with tomato rounds;
3. Third layer – more bell peppers, mushrooms, and tomatoes;
4. Fourth layer – tomatoes and any other odds and ends you have on hand.

Make sure to use plenty of tomatoes! Bake these stuffed fans in a roasting bag. In the last five minutes, cut open the bag and sprinkle a GENEROUS amount of grated cheese on top. It’s a true delight!!!!!!!
