Fluffy Oat Flour Pancakes

Ingredients:

  • Oat flour: 2 cups
  • Eggs: 2
  • Sugar (preferably brown): 3 tablespoons
  • Kefir: 2 cups
  • Baking powder: 2/3 teaspoon
  1. Combine all the ingredients in a large bowl. Mix thoroughly to form a smooth batter. If needed, use a mixer to smooth the batter.
  2. Heat a nonstick skillet over low heat. Drop heaping tablespoons of batter onto the skillet. Do not add oil or butter; this keeps the calories lower and gives the pancakes a nice, even surface. Cook on low heat.
  3. When bubbles form on the surface of a pancake, flip it. Cook 5–10 seconds more, then remove the pancake from the skillet.
