Heart Protector: Recipe for Beet Kvass

Beets improve blood composition and the health of the circulatory system thanks to beneficial nitrates that convert into nitric oxide in the body. This chemical compound boosts the production of red blood cells, making dishes or drinks with beets a quick way to regain energy. Rich in zinc and phosphorus, table beets can protect children from developing rickets, while the antioxidants in this root vegetable help prevent cancer. B vitamins support the nervous system, and iron and cobalt combat anemia.

Beet Kvass

Ingredients: 1 beet, 1.5–2 liters of brine (for 1 liter of water, use 2 tablespoons of salt and sugar), 1 slice of rye bread.

Wash the beet, peel it, cut it into large pieces, and place it in a three-liter jar—fill it halfway to three-quarters full, depending on your desired kvass strength. Pour warm brine over the beets and place the slice of rye bread on top (you’ll need to remove it in two to three days).

Cover with a towel and leave it in a warm place to ferment. After 7–10 days, strain the kvass and use it as a health drink or for preparing dishes (like cold beet soup).

To increase hemoglobin levels and detoxify, drink a glass of beet kvass daily after meals. For treating hypertension and headaches, consume half a glass three times a day on an empty stomach.
