Hearty Potato, Pork, and Mushroom Casserole

Ingredients

  • Potatoes: 2.2 lbs (1 kg)
  • Sour cream: 2 tablespoons (a thicker, tangier variety common in Eastern Europe)
  • Butter: 1 tablespoon
  • Pork: 1.1 lbs (0.5 kg)
  • Mushrooms: 10.6 oz (300 g)
  • Onion: 1
  • Vegetable oil for frying
  • Salt and black pepper to taste

Instructions

Peel the potatoes and boil them until tender. Add the butter and sour cream, then mash the potatoes into a smooth puree.

Peel and dice the onion, slice the mushrooms, and cut the pork into small pieces. In a skillet, heat the vegetable oil, then sauté the mushrooms, onion, and pork until cooked through.

In a baking dish, layer the potato puree, then top with the sautéed mixture. Season with salt, pepper, and any additional spices to taste.

Bake the dish in a preheated oven at 400°F (200°C) for 30 minutes.
