This homemade ketchup won’t taste like the store-bought kind — it uses only natural ingredients with no artificial flavor enhancers. The plum-based sauce has a rich flavor on its own, so it doesn’t need extra help. By making ketchup with plums and tomatoes at home, you’ll get the most benefit from the healthy properties of those core ingredients.
Ingredients: ripe tomatoes – 2 kg; ripe plums – 1 kg; onion – 250 g; garlic – 100 g; parsley – 1/4 bunch; hot red peppers – 2 pcs.; sugar – 200 g; bay leaves – 2 pcs.; pepper mix – 1/2 tsp; 9% vinegar – 2 tbsp; salt – 3 tsp.
Preparation
Remove the pits from the plums, peel the tomatoes, and cut them into quarters. Pass the plums and tomatoes through a meat grinder. Pour the puree into a pot and cook for 2 hours over medium heat, stirring occasionally.
Finely chop the seeded peppers, onion, garlic, and parsley in the meat grinder. Add this mixture to the tomato-plum puree along with the pepper mix, bay leaves, vinegar, sugar, and salt. Stir the sauce and cook for about 45 minutes, until thickened. At the end, remove the bay leaves from the finished sauce. This sweet-and-sour homemade plum ketchup can be canned for winter or used immediately, served with meat, poultry, fish, pasta, French fries, or sandwiches.
Life Hack
Add another spicy pepper for more heat. Store opened ketchup in the refrigerator to preserve its flavor, color, and aroma.
