How to Can Tomatoes with Carrot Tops

Canned tomatoes with carrot greens

Ingredients:

  • Carrot tops
  • Tomatoes

Brine for 5 liters (about 1.3 gallons) of water:

  • 20 tablespoons of sugar
  • 5 tablespoons of salt
  • 350g (about 1.5 cups) of vinegar

Place 4–5 carrot tops at the bottom of each jar. Fill each jar with tomatoes. Pour boiling water over the tomatoes. Cover the jars with lids and let the jars sit for 15 minutes.

Prepare the brine. Pour out the water from the jars. Fill the jars with the hot brine. Seal the jars and wrap the jars to keep them warm.
