How to Make a Beef-Tongue Roll

Roll with your tongue

Ingredients:

  • Beef tongue
  • Tenderloin (or, if the pieces are small, use two overlapping pieces)
  • Mayonnaise
  • Salt and pepper
  • Garlic

Boil the tongue, then peel it.

Pound the meat well. Rub it with mayonnaise, salt, and pepper, then press 2–3 cloves of garlic into the meat. Wrap the tongue in the meat.

Spread more mayonnaise on top, season with salt and pepper, and add more garlic.

Bake in the oven. To keep the roll tender, bake it in a roasting sleeve (tear the sleeve at the end so the top browns) or pour a little water into the bottom of the baking dish.
