Apple Roll

Ingredients:

  • 4 large eggs
  • 130 g (about 2/3 cup) sugar
  • 600 g (about 1.3 lbs) apples
  • 1 pinch of cinnamon
  • 130 g (about 1 cup) flour

Instructions:

We start by preparing the filling. First, peel the apples and grate them using a fine grater. Drain the excess juice. Add a bit of sugar and cinnamon to the apples and mix well. The filling is ready.

Now, let’s move on to making the batter. Beat the eggs, then gradually add the sugar and continue beating for a few more minutes. Next, add the flour and gently fold it in.

Line a baking sheet with parchment paper, spread the grated apples evenly over it in a thin layer, leaving a little space from the edges. Pour the batter over the apples and bake in the oven for 15 minutes at 180°C (350°F). When the cake starts to turn golden, it’s done.

Transfer the cake onto a towel and carefully remove the parchment paper. Using the towel, roll the cake into a log.

Dust the top with powdered sugar.
