Apple Syrniki


Ingredients:

2.2 lbs of full-fat cottage cheese
1.5 lbs of grated apples (using a large grater)
1.3 cups of sugar
3.5 oz of butter
6 eggs
2 tablespoons of semolina
2 tablespoons of cornstarch
0.35 oz of baking powder
Cinnamon and powdered sugar for dusting

Pass the cottage cheese through a meat grinder or blend it until smooth.
Beat the butter with the sugar, adding the egg yolks one at a time.
Mix the semolina, cornstarch, and baking powder into the cottage cheese, blending thoroughly again.
Add the grated apples and stir to combine.
Gently fold in the whipped egg whites.
Grease a baking dish (I used a glass oval dish measuring 13.5 x 9.5 inches, with a height of 1.5 inches for the finished dish) and pour in the cottage cheese mixture.
Bake at 320°F for up to 2 hours. (In my case, it took 1 hour and 30 minutes.)
Turn off the oven and crack the door open.
Leave the dish in the oven until completely cooled.
Once cooled, dust the top with cinnamon and powdered sugar or, as is often done, drizzle with chocolate.
