According to experts, the results of this experiment are astonishing.

Kaffa Roastery is one of the leading Finnish coffee roasting workshops based in the capital of Finland. The workshop’s founder, Svante Hampf, introduced the coffee blend AI-conic, developed by artificial intelligence. This is yet another testament to how cutting-edge technology can ease the workload in a sector traditionally associated with manual labor.

According to experts from International Coffee, Finland, home to 5.6 million people, consumes the most coffee in the world. Here, the per capita coffee consumption is 12 kilograms per year.

How Artificial Intelligence Crafted the Blend

It all began when Kaffa Roastery teamed up with a local consulting firm, Elev, which specializes in AI projects.

“Using models similar to ChatGPT and Copilot, the artificial intelligence was tasked with creating a blend that perfectly matched the tastes of coffee lovers, pushing the boundaries of traditional flavor combinations,” explained Elev.

Svante Hampf shared that both partners wanted to explore how various AI tools could assist in coffee roasting—a traditional craft highly valued in Finland.

“Essentially, we provided the AI with descriptions of all our coffee varieties and their flavors and tasked it with creating a new exciting blend,” said the coffee workshop founder at the Helsinki Coffee Festival, which annually gathers roasting businesses and fans of the aromatic beverage.

As a result of this collaboration, a blend featuring four coffee varieties from Brazil, Colombia, Ethiopia, and Guatemala was born. The dominant component in the blend is the Brazilian variety Fazenda Pinhal, known for its velvety taste, as reported by Tech Xplore.

In addition to this composition, the AI generated labels for the packaging and a detailed flavor description. It states, among other things, that AI-conic is a “well-balanced blend of sweetness and ripe fruits.”

Interestingly, Mr. Hampf was surprised that the artificial intelligence chose to create a blend with four different types of coffee beans instead of the usual two or three. The reason is that with fewer varieties, it’s easier to distinguish the origins of the aromas and flavors. However, after the first trial roast and blind tasting, coffee experts agreed that the blend was perfect and required no human intervention.

Kaffa Roastery hopes that this experiment will spark a dialogue among professionals about the future of coffee in Finland—a country with a rich coffee culture that leans towards new technologies and startups.
