With its flesh composed of 92% water, watermelon is an excellent way to quench your thirst quickly. Its high fiber and carbohydrate content can effectively stave off hunger without adding extra calories. Additionally, watermelon can help curb your appetite and assist with weight loss. So, let’s prepare watermelon jelly for long-term storage.
Ingredients: watermelon flesh — 1 kg, sugar — 200 g, instant gelatin — 60 g, citric acid — 1 tsp.
To make the watermelon jelly, start by removing the seeds from the flesh. Cut the watermelon, scoop out the flesh, and chop it up (you can even do this by hand).
Drain the juice into a pot and strain it. Add the gelatin to the juice, stir, and let it sit for 10 minutes to swell.
Transfer the flesh to a pot with a thick bottom, add the sugar and citric acid, mix, and place it over heat to cook. Once it boils, reduce the heat and continue to simmer for another 5 minutes, stirring constantly with a wooden spoon.
Sterilize the jars and lids. Remove the watermelon mixture from the heat, add the swollen gelatin, and stir until fully dissolved. Pour the jelly into the sterilized jars. Seal with lids and turn them upside down, ensuring no liquid leaks out. Once the jelly cools, it will thicken.
Store your homemade watermelon preserves in a cool place.
Life Hack
A dark, ventilated, dry, and cool place is ideal for storing fresh watermelon. At temperatures up to +8°C (46°F) and 75% humidity, watermelons can be kept without spoiling until New Year’s by placing them in crates lined with straw, ensuring they do not touch each other.
