Uzbek-Style Curry


Ingredients:

11 lbs of tomatoes
10 medium onions
15 tablespoons of raisins
5 heads of garlic
5 teaspoons of salt
2 teaspoons of ground black pepper
5 teaspoons of sweet paprika
5 teaspoons of mild curry seasoning
1.7 cups of vinegar
3.3 cups of sugar

Start by pouring boiling water over the tomatoes for 1-2 minutes.
Peel off the skins.
Cut them into 5-6 pieces.
Transfer them to a pot to release their juices.
Dice the onions and sauté them in oil.
Soak the raisins in hot water.
Drain the juice from the tomatoes, then add the soaked raisins and the sautéed onions, cooking for 10 minutes.
After cooking, add the garlic, all the spices, and the vinegar.
Continue to cook everything for another 40-50 minutes.
Once the sauce is ready, pour it into jars and sterilize for an additional 20 minutes before sealing.
