300g pitted cherries
300ml milk
100g wheat bran
3 eggs
150g sugar
250g vegetable oil
300g flour
1 tsp baking powder
1 tsp baking soda (activated)
vanillin
a pinch of salt
Soak the bran in milk for a few minutes to let it swell.
Whisk the eggs with sugar and vanillin.
Add the sifted flour mixed with baking powder and salt, the bran, and the baking soda activated with vinegar or lemon juice to the eggs.
Mix everything together.
Pour in the oil.
Knead the mixture.
Fold in the cherries.
Fill the molds halfway.
Bake at 180°C (350°F) for 25 minutes.
Optionally, sprinkle the finished muffins with powdered sugar.
