Ingredients:
- 2 onions
- 2 medium carrots
- 2 zucchini
- 2 eggplants
- 2 tomatoes
- 2 bell peppers
- 200 grams of bacon
- 1 bunch of parsley
- Salt and ground pepper to taste
- 150–200 grams of oil
- Optional: a pinch of hot pepper (paprika), to taste
Dice all the vegetables. Start by sautéing the onions, then add the carrots and cook them briefly as well. Next, add the bacon and the remaining ingredients. Season with salt and pepper to taste. Stir the mixture well and simmer it over low heat for 30–40 minutes.
This dish pairs wonderfully with canapés and butter, and it can also serve as a side dish for meat.
