Lenten Lobio


Ingredients:

– 0.5 liters (about 2 cups) of canned or boiled beans
– 1 tablespoon of tomato paste
– 300 grams (about 10.5 ounces) of fresh mushrooms
– 1-2 onions
– Salt and pepper to taste
– 1-2 cloves of garlic
– Fresh parsley (if available)

This recipe is incredibly simple and quick to prepare. I always use any canned beans I have on hand. If the beans are canned in tomato sauce, you can skip adding the tomato paste.

In a skillet, sauté the onions until they turn golden brown. Add the chopped fresh mushrooms. After about 5 minutes of cooking, add the beans, seasonings, and garlic. Sauté for another 5 minutes, and it’s ready to serve!
