Pear Muffins with Nut Streusel


Ingredients:

For the batter you will need:
3.2 oz (90 g) softened butter
2 eggs
2.5 oz (70 g) sugar
0.35 oz (10 g) vanilla sugar
3.5 oz (100 g) flour
1 tsp baking powder
1 large pear

For the streusel:
1.8 oz (50 g) walnuts
1 oz (30 g) cold butter
1.4 oz (40 g) flour
1.8 oz (50 g) sugar

Instructions:
Beat the eggs with a mixer, gradually adding the sugar.
Add the butter and mix well again.
Sift the flour with the baking powder and vanilla sugar, then mix it in.
Peel the pear and cut it into cubes, then fold it into the batter.
Spoon the batter into muffin cups, filling them about halfway, which should yield approximately 10-12 muffins.
Now, prepare the streusel: chop the walnuts and mix them with the sugar and flour, then add the butter and mix everything until crumbly.
Sprinkle the streusel over the tops of the muffins.
Bake the muffins at 350°F (180°C) for 20-22 minutes.
