
Turkey Breast with Mandarin and Cheese
- Turkey breast – 500 g (about 1.1 lb)
- Mandarins – 4-5 pieces
- Cheese – 30-50 g (about 1-2 oz)
- Soy sauce – 2 tablespoons
- Salt and black pepper to taste
Prepare the marinade: squeeze the juice from 2-3 mandarins and mix it with 2 tablespoons of soy sauce.
Cut the turkey breast into cutlet-sized pieces, then pound them under plastic wrap. Season the pieces with salt and black pepper. Place the meat in the marinade and marinate for at least 30 minutes.
Peel the remaining 2-3 mandarins, removing the skin and any white pith. Use 2-3 mandarin segments per turkey piece and wrap each segment inside the turkey like a roll. Secure each roll with a toothpick and arrange them in a baking dish. Pour the marinade over the rolls.
Preheat the oven to 340°F (170°C). Bake the rolls for 20-30 minutes. Sprinkle the grated cheese over the rolls and bake for another 10 minutes.
