1.5 cups of sugar or 250g of powdered sugar
200g of butter
700-710g of flour
3 eggs
1 tsp of baking soda
180-190g of honey
1 tsp of cinnamon
1 tsp of ginger
Bring the honey to a boil with the spices and melt the butter. In a separate bowl, beat the eggs with the sugar or powdered sugar, then combine everything together, adding the baking soda and flour.
Knead the dough well and refrigerate for 6 hours.
Before baking, knead the dough again.
Bake on parchment paper or a silicone mat.
Roll the dough out to about 5mm thick, trace your templates, and cut out shapes with cookie cutters.
Bake at 150-160 degrees Celsius (about 300-320 degrees Fahrenheit, depending on your oven).
Once the cookies are ready, remove them from the parchment and place them on a table. Put a board or glass on top to flatten the cookies.
You can decorate these cookies or simply stick a wafer image on them.
