New Year’s Salad “Horseshoe”

New Year's Salad 'Horseshoe'Ingredients (based on 2 servings, so adjust the quantities according to the number of diners): chicken fillet – 150 g; hard cheese – 150 g; potatoes – 200 g (2 pieces); beetroot – 250 g (1 piece); mayonnaise – 175 g; olives – 15 g (5 pieces); salt – to taste.
Preparation
Boil the chicken fillet in salted water, and separately boil the beetroot and potatoes. Allow everything to cool completely.
Dice the cooled chicken fillet into small pieces, and grate the hard cheese, peeled , and potatoes into separate bowls. For the final decoration, slice the olives into thin rings.
On a large flat plate, arrange the layers of prepared ingredients in the shape of a horseshoe. Start assembling the salad with the base layer of potatoes. Form a wide horseshoe outline and generously spread mayonnaise over this base. Next, add the chopped chicken breast on top of the potatoes and coat it with mayonnaise as well. The next layer of the horseshoe will be the grated beetroot, which you should spread evenly over the chicken and again cover with mayonnaise. Finish assembling the salad by evenly distributing the grated hard cheese over the beetroot.
Next, decorate the dish and soak the layers. Place the sliced olive rings on top of the salad – they will resemble the nails on the horseshoe. Cover the dish with plastic wrap and refrigerate. After a few hours, the salad will be infused, and the ‘Horseshoe’ will be ready to grace your New Year’s table in 2026.
