Vegetable Rice with Cabbage
Ingredients:
- 100 g (about 3.5 oz) round rice
- 500 g (about 1.1 lbs) white cabbage
- 1 onion
- 1-2 carrots
- 100 ml (about 3.4 fl oz) tomato juice
- 100 ml (about 3.4 fl oz) olive oil
- Green onions and parsley, to taste
- Salt, black peppercorns, chili pepper, and coriander, to taste
Shred the cabbage. Cut the onion into large cubes and slice the carrots into rounds.
Heat the olive oil in a pan and sauté the onion until it becomes translucent, then add the carrots. Stir in the chopped green onions and cabbage and cook over high heat, stirring constantly.
Once the cabbage is slightly browned, add the tomato juice and spices. Mix well, then reduce the heat to low. Add the rice and water—use twice as much water as rice. Cover with a lid and simmer until the rice is cooked through.
Garnish the dish with herbs and chili pepper before serving.
