How to Preserve Dill and Keep Its Intense, Pleasant Aroma
Want to keep dill’s flavor through the winter? Some people dry the herb and store it in glass jars, while others salt it. But overgrown dill isn’t very useful for most purposes.
“We harvest young dill. After cutting the dill, we run it through a meat grinder, which makes a juicy, syrupy mixture. We add a little salt, seal the jars, and store them in the refrigerator. That’s the whole trick. This way, our soups and borscht turn out great in the winter,” says one home cook.
