Oven-Baked Pork and Veggies in Tangy Barbecue Sauce

Oven-Baked Pork with Vegetables

Ingredients:

  • 300–400 g (about 0.7–0.9 lb) pork (shoulder or loin)
  • 4 hunter-style sausages
  • 1–2 bell peppers
  • 3–4 carrots
  • 1 tablespoon oil
  • Green onions, for garnish

For the Sauce:

  • 100 g (about 0.4 cup) tomato ketchup
  • 100 g (about 0.4 cup) water
  • 2 tablespoons soy sauce
  • 1 tablespoon wine vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon lemon zest
  • Paprika, salt, and black pepper, to taste

Cut the vegetables into large pieces and sauté them in oil. Add the chopped pork and hunter-style sausages.

Mix all the sauce ingredients in a bowl. Pour the sauce over the meat and vegetables.

Cover and simmer on low heat for 20 minutes. Add a little more water if the sauce evaporates too quickly.

Garnish with green onions before serving.
