Oven-Baked Pork with Vegetables
Ingredients:
- 300–400 g (about 0.7–0.9 lb) pork (shoulder or loin)
- 4 hunter-style sausages
- 1–2 bell peppers
- 3–4 carrots
- 1 tablespoon oil
- Green onions, for garnish
For the Sauce:
- 100 g (about 0.4 cup) tomato ketchup
- 100 g (about 0.4 cup) water
- 2 tablespoons soy sauce
- 1 tablespoon wine vinegar
- 1 tablespoon brown sugar
- 1 teaspoon lemon zest
- Paprika, salt, and black pepper, to taste
Cut the vegetables into large pieces and sauté them in oil. Add the chopped pork and hunter-style sausages.
Mix all the sauce ingredients in a bowl. Pour the sauce over the meat and vegetables.
Cover and simmer on low heat for 20 minutes. Add a little more water if the sauce evaporates too quickly.
Garnish with green onions before serving.
