500 g chicken liver (about 1.1 lbs)
1 onion
200 g pumpkin (about 7 oz)
2 tbsp white wine (or you can use brandy, or skip it altogether)
3 tbsp chopped nuts
2 apples
100 g vegetable or butter (about 3.5 oz)
Dice the onion into small cubes and sauté it in butter. Add the liver, and after a few minutes, add the peeled and chopped apples. Cook until done, then add the wine at the end. Cut the pumpkin into pieces and either microwave it or boil it in a small amount of water. Add it to the liver mixture and blend everything together with a blender or grind it in a food processor. Chop the nuts and mix them into the pâté. Stir well. Transfer the pâté to a baking dish and bake for 30 minutes. It’s incredibly tender and delicious.
