Shortbread cookies

200 g (about 14 tablespoons) unsalted butter
250 g (about 2 cups) powdered sugar
1 egg
1 tsp vanilla sugar
1 tsp salt
400-450 g (about 3-4 cups) all-purpose flour
2 tsp baking powder

Cream the butter with the powdered sugar. Beat in the egg, salt, and vanilla sugar, then mix into the butter. Gradually add the flour and baking powder. Take a portion of the dough, roll it out, and cut out cookies using a pastry spatula, transferring them to a baking sheet. Bake for 7-8 minutes at 200°C (about 400°F). I recommend using butter instead of margarine. The dough should be quite firm; it may seem crumbly, but it holds its shape well during baking.
