Pumpkin Patties with Mixed Meat Filling

Ingredients
- 1 medium pumpkin
- 14 oz. mixed ground meat (pork and beef)
- 1 cup milk
- 1/2 cup semolina
- 1 onion
- 2 eggs
- 2 tablespoons sugar
- Salt, pepper, and breadcrumbs
Instructions
Peel the pumpkin and remove the seeds, then grate it. Season the pumpkin with salt, place it in a skillet with heated oil, and sauté it over medium heat until tender.
Add the sugar, pour in the milk, and gradually stir in the semolina, mixing constantly to prevent lumps from forming. Once the semolina is cooked, remove the skillet from the heat and let the mixture cool.
Finely chop the onion and sauté it until golden brown. Add the ground meat and cook it, stirring frequently, until fully cooked. Set the meat aside to cool.
Once the pumpkin mixture has cooled, add the beaten eggs and mix them thoroughly. Shape the mixture into patties, spoon the meat filling onto each, and form the patties into cutlets.
Dredge the cutlets in breadcrumbs and fry them in a small amount of vegetable oil. Serve the cutlets hot on a bed of lettuce leaves and drizzle them with sour cream.
The filling for the cutlets can vary; try sautéed mushrooms with onions, grated cheese mixed with herbs, or chopped hard-boiled eggs with herbs.
