Once upon a time, pumpkins were not used as food but rather as containers for water. Nowadays, we use pumpkins in pies, smoothies, and even to make coffee. One of the most delightful ways to enjoy this versatile vegetable is by making pumpkin marmalade.
Ingredients:
500 g pumpkin, juice of 1/2 lemon, 100 g sugar (or 75 g agave syrup), 7 g agar-agar
Instructions
Peel the pumpkin, cut it into pieces, and bake or boil it until soft.
If you boiled it, drain the water.
Blend the pumpkin with lemon juice and sugar until smooth.
Pour the puree into a saucepan, add the agar-agar, and cook for 4 minutes.
Pour the mixture into molds or an oiled dish.
Let it cool — and enjoy!
The marmalade turns out a sunny orange, delicate, and fragrant. It’s the perfect alternative to store-bought sweets, adding a touch of summer warmth to those chilly days.
