The perfect recipe for a New Year’s feast and for impressing unexpected guests: the total cooking time for red fish with citrus sauce is just 30 minutes, with only 15 minutes of active preparation required from the host.
Ingredients (for 4 servings): 450 g of red fish fillet; 1 orange; 1 grapefruit; 1 shallot; 1 tablespoon of honey; 1 tablespoon of lemon juice; 1 tablespoon of olive oil; black pepper and salt to taste; a few sprigs of basil or parsley.
Cut the fish into portion-sized pieces, season with salt and pepper. Bake for 20 minutes in an oven preheated to 180°C (350°F).
Slice the citrus fruits in half, squeezing juice from one half of each fruit, while separating the untouched halves into segments. Peel each segment and cut them into smaller pieces.
Chop the shallot into small pieces and finely chop the herbs.
Place a skillet over medium heat and warm the olive oil. Sauté the shallot until soft.
