Quick Potato and Sausage Soufflés

  • 8 eggs
  • Potatoes (boiled or fried) — 150 g (about 5.3 oz)
  • Smoked sausages — 150 g (about 5.3 oz)
  • Milk — 1/2 cup
  • Cheese — 60 g (about 2.1 oz)
  • 2 tablespoons chopped parsley
  • Salt and black pepper, to taste

Whisk together the eggs, milk, salt, pepper, and parsley in a bowl.

Grease ramekins and pour the egg mixture into them. Add the chopped potatoes and sausages to each ramekin. Top each ramekin with cheese.

Bake at 190°C (375°F) for about 10–13 minutes, or until the eggs are set.
