Recipe for young potatoes: try them with cheese.

One of the most valuable aspects of potatoes is their combination of phosphorus and calcium. These minerals are present in the perfect ratio within the tuber to strengthen bones. A deficiency in calcium and an excess of phosphorus in our diet can reduce bone density and lead to osteoporosis. Including potatoes in your meals can help meet your daily needs for magnesium, zinc, iron, vitamin C, and folic acid. Boiled potatoes are rich in starch and contain almost no fat.

Ingredients: 500 g potatoes, 100 g cheese, 20 g butter, 3 sprigs each of dill and parsley, salt and black pepper to taste.

To make peeling easier, soak young potatoes in cold water for 10 minutes. To quickly remove the thin skin, wash medium-sized potatoes with a brush or scrub them under water with the abrasive side of a kitchen sponge.

Place the peeled potatoes in a pot, cover them with water, add salt, and boil over medium heat for about 15 minutes. After boiling, drain the water from the potatoes into a jar to use in cooking instead of broth.

Cut the boiled potatoes into quarters and sprinkle them with crumbled cheese. Top with a piece of butter and garnish with herbs.

* If you leave the potatoes in cold water for half an hour or longer, they will become watery. Additionally, if you leave peeled potatoes exposed to air, they will darken. It’s best to peel potatoes just before boiling.

* The water used to boil the potatoes can be utilized for making soups. This vegetable broth is more nutritious than regular water, as it is enriched with nutrients extracted from the potatoes. Potato water can also be used in baking as an ingredient for dough.
