Salad with Avocado, Sun-Dried Tomatoes, and Feta Cheese

Ingredients:

  • 1 ripe avocado
  • 10 sun-dried tomatoes
  • 1 bell pepper
  • 3 tablespoons canned corn
  • 20 olives
  • 100g feta cheese
  • Dill, chopped
  • Fresh lemon juice
  • Salt to taste

Choose a ripe, soft avocado, or pick one that’s firm and wait for it to ripen.

Slice the avocado in half lengthwise, then cut it into thin slices, immediately drizzling with lemon juice to prevent browning. Arrange the sliced avocado on a plate, drizzle with more lemon juice, and sprinkle with salt.

Finely chop the dill and sprinkle it over the avocado.

Chop the sun-dried tomatoes and layer them on top of the avocado, adding a drizzle of the oil from the tomatoes if desired.

Cut the bell pepper into thin strips and add it to the avocado and tomatoes.

Dice the feta cheese into small cubes and sprinkle them on top.

Add the corn and sliced olives.

You can gently toss the salad or leave it as is.

This salad is a family favorite. In winter, we often indulge in avocado, and I dry the tomatoes specifically for this dish. It turns out delicious, hearty, and healthy.
