Savory Scallion and Egg Pancakes

Ingredients:
– 3 eggs — 1 raw and 2 hard-boiled
– 5 tablespoons chopped scallions
– Salt and black pepper to taste
– 125 ml kefir (about ½ cup)
– 125 ml sour cream (about ½ cup)
– 1 teaspoon baking powder
– A pinch of sugar
– 1 cup all-purpose flour
– A pinch of ground nutmeg

Instructions:
1. Chop the hard-boiled eggs into cubes.
2. Add the chopped scallions and season with salt and black pepper.
3. In a separate bowl, whisk together the kefir and sour cream.
4. Add the raw egg, baking powder, salt, sugar, and nutmeg to the kefir mixture and mix.
5. Fold in the egg-and-scallion mixture with the sifted flour and stir until combined; the batter should be thick, like pancake batter.
6. Let the batter rest for 5 minutes.
7. Fry the pancakes in vegetable oil, flipping once, until golden brown on both sides.
8. Serve with sour cream.
