Summer Soup

We’re currently spending the weekend in Crimea, which calls for a lot of mobility. This means we need to whip up meals that are both quick and delicious! And nothing is more satisfying than our favorite dishes.

Our Favorite Summer Soup:
– any meat (optional)
– potatoes
– carrots
– onion, garlic, bay leaf, salt, soup spices
– cauliflower
– colorful bell peppers
– tomatoes
– semolina or “Mivina” noodles
– 1 package of processed cheese
– herbs

Start by boiling the meat with onion, garlic, bay leaf, and spices. Then toss in all the other ingredients, adding the finely chopped processed cheese at the end. Finally, sprinkle in the herbs… whether served hot or cold, this soup is simply divine!

“Mother-in-Law Style” Cutlets (she’s the one who taught me how to make cutlets so delicious):
– chicken fillet
– garlic
Batter mixture: 3 eggs + 1 tablespoon of mayonnaise, salt, spices.

Slice the fillet thinly. Rub it with salt, spices, and crushed garlic. In a separate bowl, beat the eggs with the mayonnaise (you can also use beer instead of mayonnaise—it’s great, and it works well with fish too!). Prepare some flour with a pinch of salt. Dredge the cutlet in flour, then dip it in the batter, and fry it in a generous amount of oil over high heat. Savor them on the go because they are SO delicious!!!!
