Strawberry season: recipe for an open pie

Strawberries are prized for their rich vitamin C content, which rejuvenates the body and protects against infections. This and other antioxidants found in strawberries boost brain activity and enhance memory, while also benefiting skin health by shielding it from damage caused by free radicals. Strawberries are also a source of B vitamins (including B9, or folic acid, which helps restore lost tone in cases of anemia), vitamin A, iron, magnesium, and more. Thanks to their high potassium and anthocyanin content, strawberries strengthen blood vessel walls, lower elevated blood pressure, and reduce the risk of heart attacks and strokes. The phosphorus and calcium in strawberries support dental and bone health. With a low glycemic index, these berries can be included in the diets of those with diabetes. Their appealing and fragrant fruits help normalize blood sugar levels and improve intestinal motility: the fiber in ripe berries and the seeds on their surface gently regulate digestive function. At the same time, the fiber in low-calorie strawberries promotes quick satiety, preventing overeating. The only time this delicious and nutritious berry is contraindicated is in the case of an allergy.

Ingredients: strawberries – 400 g; puff pastry – 500 g; egg – 1; sugar – 200 g; vegetable oil – 1 tsp.

Line a baking sheet or baking dish with parchment paper and grease it with oil. Cut off a quarter of the dough, then roll out the remaining portion into a sheet and place it on the parchment, spreading it across the dish.

Arrange the berries on top of the dough and sprinkle them with sugar, reserving a bit of sugar for decoration.

Roll out the remaining dough, cut it into strips, and weave them over the berries, firmly sealing the edges of the dough.

Brush the pie with the beaten egg and sprinkle with the remaining sugar.

Place the pie in an oven preheated to 200°C (about 400°F) and bake for 20 minutes.

Life Hack

Strawberries are grown using organic fertilizers, so they need to be thoroughly washed before consumption. Soak the berries in an acidic solution – a mixture of water and vinegar (either apple or regular) in a ratio of 1 tablespoon of vinegar to 1 liter of water. Soak the strawberries for no longer than 10 minutes, then rinse them.
