Stuffed tomatoes: chicken filling recipe

Tomatoes are packed with carotenoids, fiber, organic acids, proteins, pectins, mineral salts, and sugars. The skin is rich in the anti-inflammatory flavonoid naringenin, while the flesh is valued for its choline content, which helps prevent the formation of cancer cells, combats fatty liver degeneration, boosts hemoglobin levels, strengthens the immune system, and lowers cholesterol.

Ingredients (per serving): 2 tomatoes, 50 g chicken meat, 1 apple, ½ stalk of celery, ½ cup yogurt, about 1 g chives, black pepper, and salt to taste.

Shred the baked chicken meat along with the peeled apple (removing the core). Cut off the tops of the tomatoes and scoop out the insides. Add the chopped tomato flesh to the other ingredients.

Grate the cooked celery on a fine grater, mix it with the yogurt, season with salt, and add spices. Combine all parts of the salad and stuff the tomatoes with the resulting mixture, garnishing with chives (a variety with delicate leaves that lacks the sharp taste of regular green onions).

To get the most benefits from tomatoes, avoid pairing them in your diet with potatoes, bread, grains, and legumes (such as peas, beans, or lentils). The reason is the difference in digestion speed and the incompatibility of tomatoes with starch. Additionally, combining tomatoes with cucumbers can cause stomach discomfort and reduce the nutritional value of tomatoes due to the breakdown of vitamin C by the cucumber enzyme catalase.
