Toast the bread on both sides until golden brown, then place it in a warm spot. In a pan, sauté the flour in the butter, then add crushed garlic with a pinch of salt and the diced tomato. Remove the pan from the heat, stir in the sour cream, and season the sauce with salt to taste. Top each slice of toast with a sunny-side-up fried egg, drizzle the hot, thick sauce over the eggs, sprinkle the eggs with fresh parsley, and serve immediately.
Ingredients: 6 eggs, 6 slices of bread, 100 g of sour cream (about 3.5 oz), 1 tablespoon butter, 1 tablespoon flour, 1 tomato, 1 clove garlic, salt, fresh parsley.
