10.6 oz hard cheese
2 tablespoons flour
1.8 oz fat
2 tablespoons oil
1 teaspoon mustard
sugar, pepper, salt
Cut the meat into pieces, pound it flat, and season with salt and pepper. For each portion, place a slice of ham and a slice of hard cheese, roll it up, tie it with string, and sprinkle with flour. After frying in fat, place the rolls in a dish, add 2 tablespoons of water, and simmer on low heat until cooked through. Before serving, remove the strings, arrange the rolls on a plate, surround them with halved red tomatoes, and drizzle with oil mixed with mustard, a pinch of sugar, pepper, and salt. Serve with slices of dark bread on the side.
