Cottage Cheese Pinwheels

Cottage cheese snails
Ingredients:
Dough:
300g of farmer’s cheese (or cottage cheese)
150g of unsalted butter, at room temperature
2 tablespoons of sugar
1 teaspoon of vanilla sugar
1 teaspoon of baking powder
Flour, as needed
Filling:
3 tablespoons of sour cream (a thicker, tangier Eastern European-style sour cream)
3 tablespoons of sugar
1 tablespoon of raisins
1 tablespoon of walnuts
1 tablespoon of peanuts
1 tablespoon of shredded coconut
0.5 teaspoon of cinnamon

Make a soft dough with the ingredients listed above (make sure the butter is at room temperature). Add flour while kneading until the dough stops sticking to your hands and is workable.
Combine the sugar, raisins, nuts, coconut, and cinnamon in a blender and pulse until finely chopped. Omit any ingredients you don’t have.
Roll the dough into a square about 6–7 mm thick.
Spread the sour cream evenly over the surface, then sprinkle with the ground mixture. Roll it up into a log and slice into 1 cm rings.
Bake on parchment paper for 25 minutes at 170°C (about 340°F), or until golden brown.
