Ingredients:
Dough:
300g of farmer’s cheese (or cottage cheese)
150g of unsalted butter, at room temperature
2 tablespoons of sugar
1 teaspoon of vanilla sugar
1 teaspoon of baking powder
Flour, as needed
Filling:
3 tablespoons of sour cream (a thicker, tangier version of sour cream common in Eastern European cuisine)
3 tablespoons of sugar
1 tablespoon of raisins
1 tablespoon of walnuts
1 tablespoon of peanuts
1 tablespoon of shredded coconut
0.5 teaspoon of cinnamon
Using the ingredients listed above (make sure the butter is at room temperature), knead a soft dough, adding flour until it no longer sticks excessively to your hands and is workable.
Combine the sugar, raisins, nuts, coconut, and cinnamon in a blender and pulse until finely chopped. If you’re missing any of the ingredients, you can skip them.
Roll the dough into a square about 6-7 mm thick.
Spread the sour cream evenly over the surface, then sprinkle with the ground mixture. Roll it up into a log and slice into 1 cm rings.
Bake on parchment paper for 25 minutes at 170°C (about 340°F), or until golden brown.
