Two Simple Soups: Milk Dumpling Soup and Garden Vegetable Soup

Milk Soup

Start with 10 large potatoes and 2 eggs. Grate the potatoes finely and squeeze the juice through cheesecloth. Mix the remaining potato solids with the eggs and salt to form dumplings. Drop the dumplings gradually into boiling water while stirring continuously. Pour in 1 cup of milk.

Vegetable Soup

Use 2-3 potatoes, 300-400 g of fresh cabbage, one carrot, and 1 cup of green peas, plus 50 g of butter. You can also make this soup with meat broth. Boil all the vegetables (except the peas) in water. Add the green peas and hot milk. Salt the soup five minutes before it is done. At the end of cooking, stir in the butter and sprinkle with fresh herbs.
