Curly Vegan Cookies

Ingredients:

750 g all-purpose flour
250 g shredded coconut
250 g sugar
1 tsp baking powder
150 ml water
150 ml oil
15 g vanilla sugar
salt
3 tbsp jam (apricot or plum)

In a bowl, mix the flour, baking powder, and shredded coconut.
Pour in the oil and mix thoroughly. In warm water, dissolve the vanilla sugar, regular sugar, and salt.
Combine everything and knead the dough.
Divide the dough into two equal parts and refrigerate for 20 minutes.
Roll out one part into a rectangle about 0.5 cm thick (I rolled it out directly on parchment paper and then transferred it to the baking sheet).
Spread jam on top and grate the second part of the dough over it.
Bake at 180°C (350°F) for 20 minutes.
While still hot, cut into squares.
