Peas are incredibly nutritious and packed with a variety of beneficial elements. They provide the body with proteins, carbohydrates, and digestion-friendly soluble fibers. This legume is rich in B vitamins, as well as vitamins C, D, E, and K. The potassium in peas helps normalize blood pressure and prevents cardiovascular diseases. Additionally, peas contain iron, copper, magnesium, calcium, cobalt, iodine, phosphorus, and sodium. Pea soup helps regulate blood sugar levels and can prevent diabetes.

Ingredients (for a 5-liter pot): 500 g of peas; 6 pork ribs; 5 potatoes; 1 carrot; 1 onion; 5 cloves of garlic; 1 teaspoon of smoked paprika; 2 bay leaves; salt to taste; croutons and herbs for garnish.
Soak the peas in cold water overnight to soften them, and we will prepare the soup the next day.
Rinse the smoked ribs, cut them between the bones, add them to boiling water, and cook for about half an hour, skimming off the foam.
Remove the ribs from the broth, take the meat off the bones, and return it to the broth. Add the rinsed peas and cook for another 30 minutes, until the peas are tender.
Peel and wash the carrot and onion. Dice the onion into small cubes and cut the carrot into strips. Sauté them briefly in a small amount of oil.
Add the diced potatoes to the broth with the ribs and peas, and cook for 10 minutes. Finally, stir in the sautéed vegetables. Season with salt, add the bay leaves, and sprinkle in the smoked paprika.
Before serving, top the pea soup with croutons and chopped herbs (parsley or dill).

Life Hack

To help hard, dry peas cook faster, soak them for 6–8 hours in water with 1 tablespoon of baking soda. The soup should be cooked until the peas are tender, meaning they should easily mash between your fingers.
