Green Pasta with Anchovies and Tomatoes

Ingredients:

  • 250 grams of spiral or shell pasta (about 9 ounces)
  • 300 grams of broccoli (about 10.5 ounces)
  • 3-4 anchovies
  • 2 cloves of garlic
  • Dried tomatoes
  • Olive oil
  • Salt
  • Black pepper
  • Grated cheese

Instructions:

Boil the broccoli for about 5-7 minutes, then rinse it under cold water to preserve its vibrant color. Place the broccoli in a bowl and mash it with a fork.

Finely chop the anchovies and press the garlic. Add the anchovies and garlic to the broccoli, drizzle generously with olive oil, season with salt, and mix well. Cook the pasta until al dente and combine it with the broccoli mixture.

Top with grated cheese and freshly ground black pepper to taste.
