Georgian recipe: adjika with horseradish for the winter.

Hot peppers and the “evil” root are a powerful remedy against respiratory diseases. Adjika boosts the body’s tone and enhances resistance to illnesses. It invigorates, stimulates appetite, and enhances male potency. With such food, the long-lived people of the Caucasus successfully avoid infections, poisonings, and inflammations. The healing components of this condiment protect organs from aging, expand blood vessels, and combat cholesterol buildup. Adjika improves metabolism and stimulates digestion. However, its intense spiciness makes it unsuitable for those with gastritis, ulcers, or during pregnancy.

Ingredients (for 2.5 liters of the finished product): 2 kg of tomatoes, 500 g of sweet peppers, 500 g of horseradish root, 4 hot peppers, 100 g of garlic, 100 ml of 9% vinegar, 100 g of sugar, 2 tablespoons of salt.

Remove the seeds from the washed sweet peppers and pass the vegetables through a meat grinder. Add salt and sugar to the peppers, tomatoes, and horseradish. Mix the ingredients and place the mixture on medium heat to cook. Bring to a boil and then simmer, stirring, for 25 minutes.

Separately, chop the garlic and add it to the adjika along with the vinegar. Stir the mixture and cook for another 5 minutes.

Pack the adjika into sterilized jars and seal them with lids. Turn the sealed jars upside down, wrap them up, and let them cool.

Life Hack

When preparing jars and lids for sterilization, make sure to wash them with a new sponge. It’s best to use a natural cleaning agent, as the chemical components in store-bought cleaners may not rinse off completely with water. Consider using baking soda, household soap, or mustard powder.
