Potato dumplings: a recipe with eggs and green onions.

These unique patties, filled with hard-boiled eggs and nutritious green onions, are made from creamy mashed potatoes and quickly fried to a golden crisp. Served hot, these treats melt in your mouth. Beyond their delightful taste that leaves you wanting more, this dish provides lasting satisfaction and a wealth of nutrients beneficial for your health. For instance, 100 grams of potatoes contain 421 milligrams of potassium, which is 33% of your daily requirement. This essential nutrient plays a crucial role in transmitting electrical impulses through cells, meaning it supports both muscle and nerve function.

Ingredients: 450 g potatoes, 3 eggs, 5 g green onions, 50 g flour, 50 ml oil, salt and black pepper to taste.

To prepare the dish, start by hard-boiling and cooling two of the three eggs (leave one raw), and let the boiled potatoes cool after mashing them while still hot.

In the cooled mashed potatoes, crack in the raw egg, add salt, and mix well. Gradually incorporate the flour and mix again. At this point, the potato mixture is fully prepared.

Peel the cooled hard-boiled eggs, chop them up, and place them in a bowl. Add the chopped green onions to the eggs. Season the filling with pepper and mix.

On a floured surface, take a portion of the potato mixture (one-sixth of it). Shape it into a patty and place 1 tablespoon of the egg-onion filling in the center. Seal the edges of the patty over the filling and shape the dumplings into an oval form, similar to cutlets.

Heat oil in a skillet and fry the potato dumplings over medium heat for five minutes on each side.

Serve the hot dumplings immediately (with sour cream) – they are more satisfying when fresh, while cooled dumplings can be so easy to swallow that you might end up eating more than you intended.

Life Hack

To prepare the hard-boiled eggs for the filling, boil them for 8 minutes after the water starts to boil. Cook small potatoes whole, and only cut large ones for boiling. Boil the potatoes in salted water until tender, which takes about 25 minutes, and drain any excess water, as it’s not needed for the dumplings (but can be saved for soup).
