Ingredients: 1 cup of flour, 1 cup of polenta (fine cornmeal), 400 g of canned corn, 1.5 cups of kefir, 1 egg, 3 shallots, 2 tablespoons of grated Parmesan cheese, 1 tablespoon of finely chopped parsley, ½ cup of homemade mayonnaise, 1 lime (both juice and zest needed), 1 teaspoon of baking powder, ¼ teaspoon of ground dried chili pepper, oil for frying.
In a bowl, mix the sifted flour, baking powder, cornmeal, Parmesan, parsley, and chili. Make a well in the center of the dry mixture and pour in the kefir and beaten egg. Stir all the ingredients together until you achieve a smooth batter. Fold in the chopped shallots (which have a milder flavor compared to regular onions) and the corn.
In a preheated skillet, add oil for frying and pour ¼ cup of batter for each fritter. Fry the fritters over medium heat for 2 minutes on each side.
Mix the mayonnaise with the chopped lime zest and juice; this will be the sauce we serve with the corn fritters.
