New Year Salad “2023”

Ingredients: 6 eggs, 2 carrots, 2 pickles, 1 onion, 6 potatoes, 1 cup of green peas, 1 jar of mayonnaise, 1 apple, 1 red pickled pepper, pickled tomatoes (for decoration), salt, green onions, sugar.
Preparation: Boil the potatoes, eggs, and carrots. Once cooked, finely chop everything (using a grater or knife) along with the peeled apple and mix. Chop the onion, mix it with salt and sugar, and add it to the salad along with the green peas. Mix thoroughly and dress with mayonnaise. You can decorate the salad in two ways:
1. Shape the salad like a New Year clock. Peel the eggs and cut them in half. Grate the yolks and sprinkle them over the salad, while placing the egg whites around as the clock face. Chop the pepper and carrot and use them to create the clock hands. Decorate the edges of the salad with tomatoes and sprinkle with green onions.
2. Alternatively, you can present it differently: without the clock and some ingredients (in which case, a classic set of products like in Olivier salad will work). If the hostess is an artist at heart, we recommend arranging the symbolic appetizer in the shape of a rabbit figure or face.

Salad “Pomegranate Bracelet”

Ingredients: 2 pomegranates, 2 carrots, 2 beets, 2 potatoes, 1 onion, 200 g of ham, baked pork, or duck breast, 2 eggs, 2 walnuts, 2 cloves of garlic, salt, pepper, and mayonnaise to taste.

Preparation: Boil the eggs and vegetables. Grate them on a large grater, placing each ingredient in a separate bowl. Crush the garlic cloves and mix them with mayonnaise. Cut the ham, pork, or duck breast into cubes or strips. Chop and sauté the onion. Place a glass in the center of a serving plate and arrange the salad layers around it in a bracelet shape (you can add salt and pepper gradually to each layer, as well as mayonnaise). The order of layers is as follows: potatoes, half the beets, carrots, walnuts, half the ham, pork, or duck breast, sautéed onion, eggs, the other half of the meat ingredient, and finally, the remaining beet on top. Once all layers are arranged, remove the glass, coat the salad with mayonnaise, and sprinkle with pomegranate seeds. Cover the finished dish with plastic wrap and refrigerate for 12 hours.

Salad “Pineapple”

Ingredients: 4-5 rings of canned pineapple, 250-300 g of ham, 4-5 eggs, 3-4 potatoes, 1 onion, 2 walnuts, 1 apple, 1 teaspoon of lemon juice, mayonnaise, salt, and freshly ground pepper to taste.

Preparation: Wash and boil the potatoes in their skins, then cool, peel, and grate them on a large grater. Boil, peel, and chop the eggs. Cut the ham into strips or cubes. Peel, blanch, and finely chop the onion. Wash, peel, and grate the apple, then drizzle it with lemon juice. Remove the pineapple from the juice and cut it into cubes. Layer everything on a plate: 1st layer – half the potatoes, mayonnaise, salt, pepper; 2nd layer – half the onion, pepper, salt; 3rd layer – half the ham and a bit of mayonnaise; 4th layer – half the grated apple; 5th layer – half the eggs, mayonnaise, salt, and pepper; 6th layer – half the chopped pineapple; 7th layer – half the potatoes, pepper, salt, and mayonnaise; 8th layer – half the ham and a bit of mayonnaise; 9th layer – half the onion, pepper, salt, and mayonnaise; 10th layer – the second half of the apple; 11th layer – the second half of the pineapple; 12th layer – the remaining half of the eggs, mayonnaise, salt, and pepper. Decorate the top layer with chopped walnuts and green onions. Cover the salad with plastic wrap and let it sit in the refrigerator for 7-10 hours before serving.

Crusted Trout Appetizer with Praline

Ingredients: 300 g of lightly salted trout, 1 tablespoon of butter, 50 g of bread, chives, praline.
Preparation: Cut the trout into narrow strips. Melt the butter in the microwave or over the stove, finely chop the chives, and crumble the bread. Crush the praline into crumbs with a hammer. Roll the trout strips into rolls, dip one side in the butter, coat with bread crumbs, and place on a plate, topping with praline and chives. Serve the appetizer chilled.

Basket with Surprise

Ingredients: 0.5 kg of squid, 300 g of ham, onion, apple, mushrooms, olives, bread, breadsticks, salt, and pepper to taste.
Preparation: Boil the squid and cut them into strips. Cut the ham into strips as well. Dice the apple, drizzle with lemon juice, and dress with mayonnaise. Between two slices of bread, placed with the soft side up, insert the breadsticks around the edge. Between them, weave the chives in a checkerboard pattern. This will create a basket, which we fill with the salad, garnishing it with mushrooms and herbs on top. You can use either freshly cooked or canned mushrooms.

Turkey with Oranges

Ingredients: turkey carcass, 2 oranges, salt, pepper, 0.5 liters of broth, 3 tablespoons of sherry, 2 tablespoons of apricot jam, 2 tablespoons of sauce thickener or flour, cayenne pepper.
Preparation: Peel the oranges, slicing one into rounds. The washed, dried, salted, and peppered turkey carcass should be rubbed inside and out with the orange peel. Place one orange slice under the lifted skin of the turkey. Cut the second fruit into 4 pieces and place it inside the turkey. Secure the edges of the carcass and tie the wings and legs with string. Preheat the oven to 180 degrees Celsius, place the stuffed turkey in a greased baking dish, cover with foil, and roast on the lower rack for up to 3.5 hours, basting with juices. After an hour and a half of roasting, remove the foil. Mix the juices that formed during roasting with sherry, jam, bring to a boil, add the sauce thickener or flour, salt, and cayenne pepper, and serve the finished sauce with the turkey. This dish can be served with baked figs and rice with pistachios.

Mulled Wine “Alpine Glühwein”

Ingredients: 2 liters of dry or fortified red wine, 250 ml of cognac, 6 cloves, 3 cinnamon sticks, 1 orange, half a lemon, half a cup of sugar, fragrant black pepper, and nutmeg.
Preparation: Pour the wine into a pot, place it over low heat, and warm it to 70 degrees Celsius. Add the sugar and spices, stirring until the sugar completely dissolves. Pour in the cognac, add the sliced orange and lemon, and simmer for another half hour over low heat. Serve the Alpine mulled wine hot with fresh oranges.
